10 ways with canned corn

Here are 10 delicious reasons to keep canned corn in your pantry.

1.  Fritter delights
You can’t go wrong with corn fritters! Whisk together 1 cup flour, 1 cup trim milk and 2 eggs. Stir in 1 can each of drained corn kernels and creamed sweetcorn. Add vegetables such as chopped, cooked potato, peas, grated carrot and spring onions. Fry each side until golden.

2.  Creamy choice
Make a creamier, tastier risotto by adding 1 can creamed sweetcorn when the last ladle of stock is almost absorbed. This goes especially well with chicken or vegetable risotto.

3.  Stuffed potatoes
For a great side dish, scoop out the flesh of baked potatoes and mix with creamed sweetcorn, plain low-fat yoghurt, chopped lean ham and finely-chopped spring onions. Spoon mixture back into the jacket and serve.

4.  Simple soup
Make a simple chicken and corn soup: boil 500ml chicken stock then add 1 finely-sliced chicken breast and simmer. Add 1 x 420g can drained corn kernels and simmer for 10 minutes or until chicken is cooked. Pour in 1 whisked egg and 3 chopped spring onions. Cook for 2 minutes. Add a little sesame oil and garnish with sliced spring onion.

5.  Corn mash
Add 1 can drained corn kernels halfway through mashing potatoes. Corn mixes well with potatoes and they add great texture.

6.  Rice salad
For a light, tasty meal, combine cooked brown rice, drained corn kernels, chickpeas, chopped roasted capsicum and parsley. Drizzle with olive oil and lemon juice then season with black pepper.

7.  Pie surprise
Add drained corn kernels to your next pie for more substance – vegetable pie, shepherd’s pie, meat pie or even pizza pie!

8.  Pockets, please
For a quick light meal or snack combine 1 small can drained corn kernels with tuna, cottage cheese and chopped chives. Fill a pita pocket with the mixture.

9.  Meat loaf munchies
For a simple way to add flavour, texture and fibre to every meat loaf bite – without adding fat – add 1 can drained corn kernels to the mix.
